Ingredients

  • 2 lbs. chicken thighs (or breasts), cut into 1" cubes
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • Sesame seeds and chopped green onion for garnish
  • 8 skewers

Instructions

  1. In a medium saucepan, mix cornstarch with water until smooth. Add brown sugar, soy sauce, garlic, ginger, rice vinegar, honey, and sesame oil. Heat over medium heat until simmering and slightly thickened.
  2. Allow the sauce to cool before using half to marinate the chicken in a ziplock bag for at least 30 minutes.
  3. Preheat the grill to medium heat and oil the grates.
  4. Thread marinated chicken onto skewers.
  5. Grill skewers for about 20-30 minutes, turning every 3-4 minutes until fully cooked (internal temperature of 165°F). Baste occasionally with reserved teriyaki sauce during grilling.
  6. Let rest for five minutes before serving and garnish with sesame seeds and chopped green onions.
