  • 3.4 ounces instant pistachio pudding mix
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup light brown sugar
  • ¾ cup granulated sugar
  • ¾ cup unsalted butter (softened)
  • 1 teaspoon clear vanilla extract
  • 1 egg (room temperature)
  • 1 cup white chocolate chips
  • ½ cup chopped pistachios

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, pistachio pudding mix, baking soda, and salt.
  3. In a large bowl, cream softened butter with brown sugar and granulated sugar until fluffy.
  4. Add in the egg and vanilla extract, mixing until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just blended.
  6. Fold in white chocolate chips and chopped pistachios gently.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. Scoop rounded tablespoons of dough onto prepared baking sheets, leaving space between each cookie.
  9. Bake for 12-14 minutes or until edges are lightly golden but centers remain soft.
  10. Let cool on the baking sheet for several minutes before transferring to wire racks.
