  • 2¼ teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1½ teaspoons salt
  • 1 cup warm water (110°F)
  • 3 tablespoons olive oil
  • 4 tablespoons softened butter
  • 3 cloves minced garlic
  • 1½ tablespoons dried Italian herb blend
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large mixing bowl, combine warm water and sugar; sprinkle over active dry yeast and let sit for about 5 minutes until foamy.
  2. Add olive oil, salt, and flour to the yeast mixture; mix until combined into a shaggy dough.
  3. Transfer to a floured surface and knead for about 6-8 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a towel, and let rise for about an hour or until doubled in size.
  5. Prepare herb butter by mixing softened butter with minced garlic and dried herbs; set aside.
  6. Roll out the risen dough into a rectangle (12×18 inches) and spread the herb butter evenly across.
  7. Sprinkle mozzarella, parmesan, and parsley over the buttered surface; roll tightly from one long side to form a loaf.
  8. Place seam-side down into a greased loaf pan; cover lightly and let rise again for about 30-45 minutes.
  9. Preheat oven to 375°F (190°C). Bake for 30-35 minutes until golden brown and hollow-sounding when tapped.
  10. Cool on a wire rack before slicing.
