  • 2 teaspoons corn flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla essence
  • 1 large egg & 1 egg yolk
  • 3/4 cup white chocolate chunks
  • 1/2 cup freeze-dried raspberries
  • 4 ounces softened cream cheese
  • 1/4 cup icing sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg, egg yolk, and vanilla essence, mixing until well combined.
  4. In a separate bowl, sift together the plain flour, corn flour, salt, and baking soda. Gradually add to the wet mixture while stirring on low speed until just combined.
  5. Gently fold in the white chocolate chunks and freeze-dried raspberries until evenly distributed.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Scoop tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart.
  8. Bake for 10-12 minutes until lightly golden around the edges but still soft in the center. Allow cooling on the sheets for five minutes before transferring to wire racks.
