  • 2 tablespoons baking powder
  • ½ cup butterscotch chips
  • ½ cup butterscotch syrup

Instructions

  1. In a large mixing bowl, whisk together 2 eggs and 3 tablespoons of sugar until light and fluffy.
  2. Add in 2 ¼ cups of milk and ¾ cup of vegetable oil; mix until fully combined.
  3. Gently sift in 2 ½ cups of flour, ¾ teaspoon of salt, and 2 tablespoons of baking powder; stir until just combined (lumps are okay).
  4. Fold in the butterscotch chips and syrup gently.
  5. Let the batter rest for about 5-10 minutes.
  6. Preheat your skillet or electric griddle to medium heat.
  7. Pour about ¼ cup of batter onto the skillet for each pancake; cook until bubbles form on the surface before flipping.
  8. Cook until golden brown on both sides; serve warm with additional syrup and whipped cream if desired.
