20 ounces frozen peaches
1 cup granulated sugar
1 cup brown sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup unsalted butter (cold)
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 cup boiling water
1/2 teaspoon almond extract (optional)
1/2 teaspoon nutmeg
2 teaspoons cornstarch
1 teaspoon cream of tartar
1/2 teaspoon salt
Instructions
Preheat your oven to 375°F. Spray a 9×13 baking dish with non-stick spray.
In the prepared dish, combine frozen peaches with both sugars, vanilla extract, cinnamon, nutmeg, cornstarch, and cream of tartar. Mix gently until combined.
Cover the dish with foil and bake for 20 minutes.
In a separate bowl, whisk together flour, sugars, baking powder, salt, and remaining cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
Stir in boiling water until just combined; do not overmix.
Remove the peach mixture from the oven and dollop the biscuit topping over it.
Sprinkle additional sugar mixed with cinnamon on top and bake for another 30-45 minutes until golden brown.
