  • 1 red bell pepper, diced

  • 1 (14-ounce) can unsweetened coconut milk
  • 4 cups vegetable stock
  • 1 (13-ounce) package potstickers (vegetarian or meat-filled)
  • 2 heaping cups fresh spinach
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. In a large stockpot, heat olive oil over medium-high heat. Add minced garlic, diced onion, red bell pepper, and sweet potato. Sauté until fragrant and softened.
  2. Stir in red curry paste and cook for 2 minutes until aromatic.
