  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 Tbsp olive oil (or coconut oil)
  • 2 tsp ground ginger
  • 2 tsp minced garlic
  • 1 jar (4 oz) red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp peanut butter
  • 5 Tbsp brown sugar
  • 4 tsp soy sauce
  • Juice from 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté diced onions, carrots, and potatoes for about 5 minutes until onions are translucent.
  2. Add cubed chicken and cook until browned, about another 3–4 minutes. Stir in ground ginger and minced garlic.
  3. Mix in the red curry paste, then add coconut milk and stir to combine. Simmer for about 10 minutes.
  4. Stir in peanut butter, brown sugar, soy sauce, and lime juice; let simmer for an additional 5 minutes until flavors meld.
