  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, cut into bite-size pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 Tbsp. olive oil (or coconut/vegetable oil)
  • 2 tsp. ground ginger
  • 2 tsp. minced garlic
  • 1 jar (4 oz) red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp. peanut butter
  • 5 Tbsp. brown sugar
  • 4 tsp. soy sauce
  • Juice from 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium-high heat; sauté onion, carrot, and potato for about 4–5 minutes until softened.
  2. Add cubed chicken, ginger, and garlic; stir for another few minutes until chicken begins to brown.
  3. Mix in red curry paste until fully combined.
  4. Pour in coconut milk and let it simmer gently for about 10 minutes.
  5. Stir in peanut butter, brown sugar, soy sauce, and lime juice; cook for an additional 4–5 minutes until well combined.
  6. Serve hot over jasmine rice and garnish with chopped peanuts if desired.
