  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper, finely chopped
  • ½ medium yellow onion, finely chopped
  • 2 (13.5-ounce) cans quartered artichoke hearts, drained
  • 2 cups baby spinach, roughly chopped
  • ½ cup mayonnaise
  • 4 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken into bite-sized pieces and place in a large mixing bowl.
  3. Finely chop bell pepper and onion; add to the bowl.
  4. Stir in drained artichokes and chopped spinach.
  5. In another bowl, mix mayonnaise with minced garlic, lemon juice, zest, oregano, thyme, salt, and pepper. Pour over the chicken mixture and combine thoroughly.
  6. Transfer the mixture to a greased 9×13-inch baking pan.
  7. Bake for 25-30 minutes until chicken is cooked through (165°F/75°C).
  8. Let rest for 5-10 minutes before serving.
