  • 1 lb frozen shrimp (peeled and deveined)
  • 16 oz frozen cauliflower rice
  • 2 handfuls fresh spinach
  • 1 tbsp Kite Hill Foods Chive Almond Milk Cream Cheese
  • 1 tbsp ghee
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • Pinch of black pepper

Instructions

  1. Heat ghee in a large sauté pan over medium-high heat until shimmering.
  2. Add thawed shrimp along with paprika, garlic powder, red pepper flakes, sea salt, and black pepper. Cook for about 2 minutes on each side until they are pink and opaque.
  3. In another pan, heat olive oil over medium-high heat. Add garlic powder, sea salt, and black pepper before adding fresh spinach.
  4. Sauté spinach until wilted (about 1-2 minutes). Mix in Kite Hill cream cheese until melted and creamy.
  5. Serve the creamy spinach mixture over cauliflower rice and top with spicy shrimp.
