1 lb frozen shrimp (peeled and deveined)
16 oz frozen cauliflower rice
2 handfuls fresh spinach
1 tbsp Kite Hill Foods Chive Almond Milk Cream Cheese
1 tbsp ghee
1 tsp olive oil
1 tsp paprika
1/2 tsp crushed red pepper flakes (adjust to taste)
1 tsp garlic powder
1/2 tsp sea salt
Pinch of black pepper
Instructions
Heat ghee in a large sauté pan over medium-high heat until shimmering.
Add thawed shrimp along with paprika, garlic powder, red pepper flakes, sea salt, and black pepper. Cook for about 2 minutes on each side until they are pink and opaque.
In another pan, heat olive oil over medium-high heat. Add garlic powder, sea salt, and black pepper before adding fresh spinach.
Sauté spinach until wilted (about 1-2 minutes). Mix in Kite Hill cream cheese until melted and creamy.
Serve the creamy spinach mixture over cauliflower rice and top with spicy shrimp.
