  • 1/2 cup fresh orange juice
  • 1/3 cup fresh lime juice
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 4 cloves garlic (minced)
  • 23 pounds skirt steak
  • Salt and pepper to taste
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1/41/3 cup olive oil
  • 1/2 medium onion (diced)
  • 3 garlic cloves
  • 3 tablespoons fresh lime juice
  • 2 tablespoons apple cider or apple vinegar
  • 1/2 teaspoon salt & 1/2 teaspoon pepper
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a mixing bowl, whisk together olive oil, orange juice, lime juice, soy sauce, minced garlic, salt, and pepper to create the marinade.
  2. Place the skirt steak in a resealable bag or shallow dish and pour the marinade over it. Ensure every inch is coated.
  3. Refrigerate the marinating steak for at least 4 hours or overnight for best flavor.
  4. Preheat your grill to high heat (450°F to 500°F). Clean the grates thoroughly.
  5. Remove the steak from the marinade and let it sit at room temperature for 20-30 minutes before grilling.
  6. Grill each side for 3-4 minutes until desired doneness is reached (medium-rare recommended).
  7. Allow the steak to rest for 5-10 minutes before slicing against the grain.
