  • 1 lb skirt steak (or flank steak), thinly sliced
  • Kosher salt
  • Freshly ground black pepper
  • 3 tbsp cornstarch
  • 2 tbsp canola oil, divided
  • 1 lb green beans, trimmed
  • 3 cloves garlic, minced
  • 3” piece of ginger, peeled and grated
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp rice apple vinegar
  • 3 tbsp sugar
  • 2 green onions, chopped
  • 1 tbsp sesame seeds (optional)

Instructions

  1. In a large mixing bowl, pat the beef dry and season with kosher salt and black pepper. Toss in cornstarch until evenly coated.
  2. Heat 1 teaspoon of canola oil in a skillet over medium-high heat; sauté the green beans for about one minute until vibrant. Add two tablespoons of water and cover to steam for one minute. Transfer to a plate.
  3. Increase heat to high and add the remaining tablespoon of canola oil to the skillet. Sear the beef strips for about 2 to 3 minutes until browned but slightly pink in the center.
  4. Reduce heat to medium; add minced garlic and grated ginger to the skillet, cooking until fragrant (about 30 seconds).
  5. Pour in soy sauce, rice apple vinegar, and sugar; stir well to coat the beef.
  6. Fold in green beans and cook for another minute until heated through.
  7. Serve topped with chopped green onions and sesame seeds.
