  • 1 pound breakfast beef sausage (or turkey/chicken)
  • 1/2 cup grated sharp cheddar cheese (omit for dairy-free)
  • 1/2 cup panko breadcrumbs
  • 2 large eggs (divided)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme leaves
  • 1 box puff pastry (17.3 ounces)
  • Hot honey for drizzling

Instructions

  1. Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the breakfast beef sausage, grated cheddar cheese, panko breadcrumbs, one egg, and thyme leaves. Mix until well combined.
  3. Roll out the puff pastry on a floured surface and cut it into strips. Shape the sausage mixture into logs and place them down the center of each strip.
  4. Brush one side of the pastry with Dijon mustard and the other with egg wash before rolling it around the filling. Seal tightly and score the tops with a knife.
  5. Place on the baking sheet, brush with remaining egg wash, sprinkle Everything But The Bagel seasoning on top, and bake for 18-20 minutes until golden brown.
  6. Drizzle hot honey over the rolls just before serving.
