  • 2 pounds salmon fillet (whole or cut into 6-oz portions)
  • ¼ cup olive oil
  • ⅓ cup soy sauce (reduced sodium optional)
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon brown sugar (optional)
  • 1 tablespoon chopped parsley
  • 4 cloves garlic (minced)
  • 1 teaspoon lemon zest
  • Salt & pepper (to taste)

Instructions

  1. Prepare the salmon by patting it dry with paper towels and checking for any bones.
  2. In a medium measuring jug, whisk together olive oil, soy sauce, lemon juice, honey, brown sugar (if using), parsley, garlic, lemon zest, salt, and pepper until well combined.
  3. Place the salmon in a large zip-top bag and pour the marinade over it. Seal tightly while removing excess air.
  4. Refrigerate for 30 to 60 minutes to allow flavors to meld.
  5. Preheat grill to 400-450°F or oven to 375°F.
  6. For grilling: Place salmon skin-side down on oiled grates; cook for about 10-12 minutes per inch of thickness until opaque.
  7. For baking: Place marinated salmon in a lightly oiled baking dish; cook for about 12-22 minutes depending on thickness.
  8. Let rest for five minutes before serving.
