  • ½ cup Panko breadcrumbs
  • ¼ cup all-purpose flour
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ green bell pepper (diced)
  • ½ red bell pepper (diced)
  • 1 egg (lightly beaten)
  • ¼ cup mayonnaise
  • 1 tbsp Worcestershire sauce
  • ¼ cup cilantro (chopped)
  • Olive oil for frying or greasing

Instructions

  1. In a large bowl, combine Panko breadcrumbs, flour, garlic powder, salt, and black pepper.
  2. In another bowl, mix flaked salmon, mayonnaise, Worcestershire sauce, diced vegetables, cilantro, and the beaten egg until well combined.
  3. Gently fold the wet mixture into the dry ingredients until just combined; avoid over-mixing.
  4. Chill the mixture in the refrigerator for about 20 minutes.
  5. Shape the mixture into patties or balls using wet hands.
  6. For frying: Heat olive oil in a skillet over medium heat and fry croquettes for about 3–4 minutes on each side until golden brown.
  7. For baking: Preheat oven to 400°F (200°C), place croquettes on a greased baking sheet, brush with olive oil, and bake for about 15–20 minutes, flipping halfway.
