  • 2 1/4 tsp active dry yeast
  • 1 1/2 tbsp granulated sugar
  • 1/4 cup lukewarm milk
  • 2 cups all-purpose flour
  • 1 egg (or flaxseed meal alternative)
  • 1/2 cup pumpkin puree
  • 3/4 tsp salt
  • 1 1/2 tsp dried rosemary
  • 3/4 tsp ground cardamom
  • 1 egg + 1 tbsp milk or water (for egg wash)

Instructions

  1. Brown the butter in a light-colored saucepan over medium heat until golden and fragrant.
  2. In a stand mixer, combine yeast, sugar, and lukewarm milk; let it froth for 5-10 minutes.
  3. Add the browned butter, flour, egg (or flaxseed mixture), pumpkin puree, salt, rosemary, and cardamom to the yeast mixture; mix until combined.
  4. Knead the dough on medium-low speed for about 25 minutes until smooth and elastic.
  5. Shape the dough into eight equal pieces and place them in a greased baking tin seam-side down.
  6. Cover and let rise until doubled in size (45 minutes to 1 hour).
  7. Preheat oven to 375°F (190°C). Brush rolls with an egg wash made from whisking together an egg with milk or water.
  8. Bake for 20-25 minutes until golden brown and hollow-sounding when tapped.
