  • 2 Tbsp lemon zest
  • 1 ½ cups gluten-free 1:1 flour (or all-purpose flour)
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ⅔ cup raspberries (frozen, broken into smaller pieces)
  • Coarse sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and sugar until smooth.
  3. Add in the egg, vanilla extract, lemon juice, and mix until combined.
  4. Fold in lemon zest and dry ingredients (flour, baking powder, baking soda) gently until just incorporated.
  5. Add frozen raspberries and fold carefully to maintain their shape.
  6. Chill dough for at least 10 minutes.
  7. Scoop dough onto a parchment-lined baking sheet, spacing them apart.
  8. Bake for 14 to 16 minutes until golden brown around the edges.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
