Ingredients

  • 6 medium Yukon Gold or red potatoes
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 4 hard-boiled eggs, peeled
  • 2 tablespoons white distilled vinegar
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons pickle relish
  • Salt and pepper to taste
  • 2 spring onions, sliced
  • 1 teaspoon paprika

Instructions

  1. Scrub and peel the potatoes. Cut them into uniform one-inch cubes.
  2. Boil the potato cubes in salted water until firm-tender (about 8 minutes). Drain and let cool.
  3. While the potatoes cool, chop the onion, celery, and hard-boiled eggs.
  4. In a mixing bowl, combine mayonnaise, vinegar, mustard, relish, salt, and pepper.
  5. Gently mix cooled potatoes with vegetables and dressing until well combined.
  6. Chill in the refrigerator for at least one hour before serving. Garnish with sliced spring onions and paprika.
