  • 1/4 cup shredded coconut (toasted)
  • 810 fresh mint leaves
  • 2 limes (zested and juiced)
  • 2 tablespoons honey

  1. Toast the shredded coconut in a skillet over medium-low heat for about 3-5 minutes until golden brown. Stir frequently to prevent burning.
  2. Cut the pineapple into bite-sized cubes and add them to a large mixing bowl.
  3. Slice the kiwis in half and scoop out the flesh with a spoon; chop into smaller pieces before adding to the bowl.
  4. Roll the mint leaves tightly, slice thinly (chiffonade), and add them to the bowl.
  5. In a separate bowl, whisk together lime zest, lime juice, and honey until well combined.
  6. Pour the dressing over the fruit mixture and gently toss until everything is evenly coated.
  7. Chill in the refrigerator for at least 30 minutes before serving. Top with toasted coconut just before serving.
