  • 1 cup Mezzetta Golden Greek Peperoncini (stems removed)
  • 1/3 cup Mezzetta Sliced Tamed Jalapeno Peppers
  • 1/2 red bell pepper (seeded and roughly chopped)
  • 1/2 yellow bell pepper (seeded and roughly chopped)
  • 1/4 white onion (roughly chopped)
  • 3 cloves garlic (halved)
  • 2 Tbsp Mezzetta Golden Greek Peperoncini juice
  • 1/2 tsp fresh lemon juice
  • 1/4 tsp red pepper flakes
  • 1/4 cup freshly chopped parsley
  • 2 tsp olive oil
  • Salt and black pepper to taste

Instructions

  1. In a food processor, combine the peperoncini, jalapeños, red bell pepper, yellow bell pepper, onion, and garlic. Pulse until finely chopped.
  2. Transfer the mixture to a medium saucepan over medium heat. Add the peperoncini juice, lemon juice, and red pepper flakes. Stir gently for 3–5 minutes until vegetables soften slightly.
  3. Drain excess liquid using a fine mesh sieve to ensure the relish isn't watery.
  4. Allow the mixture to cool before transferring it to a bowl. Stir in parsley, olive oil, salt, and pepper until well combined.
  5. Chill in the refrigerator for at least one hour before serving.
