  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 packages cream cheese (8 ounces each)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar (packed)
  • 1/2 cup light corn syrup
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsalted butter
  • 1/2 teaspoon kosher salt
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 13×9-inch baking dish with parchment paper.
  2. In a food processor, pulse graham cracker crumbs and 1/4 cup granulated sugar until fine. Mix in melted butter and press into the bottom of the prepared dish.
  3. In an electric mixer, beat softened cream cheese and 3/4 cup granulated sugar until smooth. Add eggs and vanilla, mixing until fluffy. Pour over the crust.
  4. In a saucepan, combine brown sugar, corn syrup, heavy cream, butter, and salt over medium heat until boiling. Remove from heat and stir in vanilla extract and chopped pecans.
  5. Pour pecan mixture over the cheesecake layer and bake for about 35 minutes or until golden brown on top.
  6. Allow to cool completely before refrigerating for at least four hours (ideally overnight) before slicing.
