6 tablespoons salted butter
2/3 cup packed brown sugar
1/4 teaspoon cinnamon
3 large peaches, peeled and sliced
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup softened butter
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1/2 cup milk (dairy or non-dairy)
Instructions
Preheat the oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
In a microwave-safe bowl, combine the salted butter, brown sugar, and cinnamon. Heat until melted and stir until smooth. Pour this mixture into the bottom of the prepared pan and arrange peach slices on top.
In a separate bowl, whisk together flour, baking powder, and salt.
Cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
Gradually add in dry ingredients while alternating with milk until just combined.
Spread the batter over the peaches evenly and bake for 40-45 minutes or until golden brown.
