  • ½ cup heavy cream (divided)
  • 6 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Gradually add in egg whites, mixing until well combined.
  4. Sift together flour, baking powder, and salt, then fold into the butter mixture.
  5. Gently fold in diced peaches and sparkling grape juice until just combined.
