  • 2 boneless skinless chicken breasts (8 ounces each)
  • 3/4 teaspoon table salt
  • 3/4 teaspoon ground black pepper
  • 2 cups chopped fresh spinach, stems removed
  • 3 ounces cream cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup finely chopped sun-dried tomatoes
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice each chicken breast in half horizontally for even cooking. Season both sides with salt and pepper.
  3. Place the chicken on a baking tray lined with parchment paper.
  4. In a skillet over medium heat, wilt the spinach for about 2 minutes. Remove from heat.
  5. In a mixing bowl, combine wilted spinach, softened cream cheese, shredded cheddar cheese, chopped sun-dried tomatoes, and garlic powder until well blended.
  6. Spoon the mixture evenly over each chicken piece.
  7. Bake uncovered for 20 minutes or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before serving.
