  • 4 cups frozen corn (or fresh grilled corn)
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 bunch fresh cilantro, minced
  • 1 jalapeño, diced (seeds removed for less heat)
  • 1/2 large red onion, diced
  • 2/3 cup crumbled cotija cheese (or feta)
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 tablespoons fresh lime juice (about 2 limes)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Instructions

  1. Heat a sauté pan over medium-high heat. Add olive oil and let it shimmer before adding the frozen corn and diced jalapeños. Sauté until the corn is slightly charred, about 7–10 minutes. Transfer to a large mixing bowl.
  2. Add diced red bell pepper, minced cilantro (reserve some for garnish), and diced red onion to the bowl with the corn; mix well.
  3. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, cumin, paprika, salt, and chili powder until smooth.
  4. Pour the dressing over the salad mixture and gently fold in until everything is well-coated. Mix in half of the crumbled cotija cheese.
  5. Garnish with remaining cheese and cilantro before serving.
