  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil and butter.
  2. Sear the salmon fillets skin-side down for about 5 minutes until golden brown.
  3. Flip the salmon carefully and remove them from the pan once cooked through; keep warm.
  4. In the same skillet, sauté minced garlic until fragrant (about 30 seconds).
  5. Add chopped sun-dried tomatoes and cook for another 2 minutes.
  6. Pour in chicken broth and heavy cream; stir to combine and simmer until slightly thickened (3-4 minutes).
  7. Mix in grated Parmesan cheese, dried thyme, dried basil, salt, and pepper; let simmer for another minute.
  8. Return the salmon to the pan to coat in sauce before serving.
  9. Garnish with fresh parsley and serve immediately.
