  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cooked and crumbled turkey bacon
  • 1/4 cup diced green onions

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 casserole dish.
  2. Boil diced russet potatoes in a large pot of salted water until fork-tender (about 15–20 minutes). Drain well.
  3. In the same pot, add unsalted butter and cream cheese to the hot potatoes; mash until smooth.
  4. Stir in sour cream, milk, garlic powder, salt, pepper, and half of the cheddar cheese until well combined.
  5. Fold in crumbled turkey bacon and pour the mixture into the prepared casserole dish.
  6. Top with remaining cheddar cheese and bake for 25–30 minutes or until bubbling and golden brown.
  7. Allow to rest for 10–15 minutes before garnishing with diced green onions and serving.
