  • 1/2 cup light brown sugar, packed

  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/3 cup freeze-dried blueberries, chopped
  • 1/4 cup coarse sanding sugar, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, combine unsalted butter, granulated sugar, light brown sugar, and lemon zest; mix until light and fluffy.
  3. Add room temperature egg and vanilla extract; mix on low speed until combined.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.
  5. Gradually add dry ingredients to wet mixture using gentle folding motions.
  6. Fold in freeze-dried blueberries carefully until just combined.
  7. Chill dough for 30 minutes in the refrigerator.
  8. Scoop chilled dough onto baking sheets; roll in coarse sanding sugar if desired.
