  • 4 cups cubed rotisserie chicken (or cooked chicken breast)
  • 3/4 cup no added sugar marinara sauce
  • 1 tbsp Italian seasoning
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 tbsp almond flour
  • 3/4 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup finely crushed parmesan crisps (or beef rinds)
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  3. Add Italian seasoning, marinara sauce, almond flour, and cubed chicken to the skillet. Stir well and heat through for about five minutes.
  4. Transfer the mixture into a greased 9" x 13" casserole dish.
  5. Layer with grated parmesan cheese followed by shredded mozzarella cheese.
  6. Top with crushed parmesan crisps or beef rinds.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
  8. Allow to rest for 5-10 minutes before serving.
