  • 1 cup dry quinoa
  • 15 oz can chickpeas (drained and rinsed)
  • 1 English cucumber (chopped)
  • 1/2 small red onion (minced)
  • 1/2 cup packed fresh parsley (finely chopped)
  • 1/2 cup loosely-packed fresh mint leaves (finely chopped)
  • 1/2 cup roasted salted pistachios (chopped)
  • 1 cup crumbled feta cheese (4 oz)
  • Salt and pepper (to taste)
  • 1/2 cup lemon juice (~34 lemons)
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon honey

Instructions

  1. In a medium saucepan, bring the chicken or vegetable stock to a gentle boil. Add the dry quinoa and stir. Cover and simmer for about 15 minutes until all liquid is absorbed.
  2. While the quinoa cooks, prepare the vegetables: chop the cucumber, mince the red onion, and finely chop the parsley and mint.
  3. In a large mixing bowl, combine the cooked quinoa, chickpeas, cucumber, red onion, parsley, mint, and pistachios.
  4. In a separate bowl or jar, whisk together lemon juice, olive oil, honey, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad mixture and toss gently until everything is evenly coated. Serve immediately or refrigerate to let flavors meld.
