  • 1 lb large shrimp (deveined and pat dried)
  • 12 Scotch bonnet peppers (finely chopped)
  • 1/2 small onion (finely chopped)
  • 2 stalks green onion (scallions, finely chopped)
  • 5 cloves garlic (minced)
  • 45 pimento seeds (allspice berries, crushed)
  • 1 bunch fresh thyme (56 sprigs, hard stems removed)
  • 1 tsp paprika
  • 2 tsp fish or seafood seasoning
  • 1 tbsp white vinegar
  • 2 tbsp vegetable oil
  • 2 tbsp butter

Instructions

  1. In a large mixing bowl, combine shrimp with vegetable oil, scotch bonnet peppers, onion, green onion, garlic, crushed pimento seeds, fresh thyme, paprika, fish seasoning, and black pepper. Toss gently to coat.
  2. Let the mixture marinate at room temperature for about 15–20 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  4. Add marinated shrimp and cook for about 3–4 minutes until they turn pink and opaque.
  5. Stir in butter and vinegar; cook for an additional 2–3 minutes until the sauce thickens slightly.
  6. Serve hot alongside rice or crusty bread.
