  • ¼ cup cornstarch
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil
  • ⅓ cup soy sauce
  • ⅓ cup water
  • ⅓ cup light brown sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons minced garlic
  • ½ yellow onion, diced
  • 2 large jalapeno peppers, sliced
  • Sesame seeds (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. In a large mixing bowl, combine chicken thighs with cornstarch, kosher salt, and black pepper. Toss until evenly coated.
  2. In another bowl, whisk together soy sauce, water, light brown sugar, and minced garlic until well mixed.
  3. Heat olive oil in a large nonstick skillet over medium-high heat. Add coated chicken pieces and fry until golden brown, about 4 minutes per side. Remove from skillet and keep warm.
  4. In the same skillet, add diced onion and sliced jalapenos; sauté until softened (about 4-6 minutes).
  5. Return the chicken to the skillet along with the soy sauce mixture. Stir well and cook for an additional 3 minutes until heated through and sauce thickens slightly.
  6. Serve over fluffy white rice and garnish with sesame seeds.
