  • 12 duck eggs (or substitute with chicken eggs)
  • 8 chicken eggs
  • 34 garlic cloves, smashed
  • 12 tbsp crushed red pepper flakes
  • 23 fresh jalapeños, sliced
  • 1 sweet red pepper, chopped
  • 2 cups white vinegar
  • 2 cups water
  • 2 tbsp sugar
  • 1 tbsp salt

Instructions

  1. Boil duck and chicken eggs in a large pot for 9–12 minutes until hard-cooked. Transfer to an ice bath immediately.
  2. In a saucepan, combine vinegar, water, sugar, and salt; bring to a boil until dissolved.
  3. Layer smashed garlic cloves, crushed red pepper flakes, jalapeños, and sweet red peppers in clean glass jars.
  4. Place peeled eggs on top of the layered ingredients in the jars.
  5. Pour warm brine over the contents until fully submerged.
  6. Seal jars tightly and refrigerate for at least three days (preferably one week) before enjoying.
