  • 2 ears fresh corn or 1½ cups frozen corn
  • 1 tsp olive oil (for corn)
  • ½ tsp cumin
  • Pinch of cayenne pepper
  • 1 tbsp chopped cilantro
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely diced
  • 1 bell pepper, chopped
  • 2 cups romaine lettuce or spinach
  • ½ cup plain Greek yogurt
  • Juice of ½ lime (for dressing)
  • 1 tbsp olive oil (for dressing)
  • 1 tsp honey (optional)
  • Salt, pepper, and garlic powder (to taste)
  • Crumbled cotija or feta cheese (optional)
  • Fresh cilantro or parsley for garnish
  • Lime wedges for serving

Instructions

  1. Marinate chicken breasts in olive oil, lime juice, chili powder, smoked paprika, minced garlic, salt, and pepper for 20–30 minutes.
  2. Grill chicken on medium-high heat for about 5–6 minutes per side until cooked through (165°F internal temperature). Remove from grill and let rest before slicing.
  3. Brush corn with olive oil and grill for about 8–10 minutes until charred; slice kernels off cob.
  4. In a bowl, mix grilled corn with cumin, cayenne pepper, cilantro, and lime juice.
  5. Assemble bowls by layering greens first, then topping with sliced chicken, corn mixture, tomatoes, onion, and bell pepper.
  6. Drizzle with Greek yogurt dressing made from yogurt mixed with lime juice, olive oil, honey (optional), salt, pepper, and garlic powder.
