  • 2 cups pumpkin purée
  • 1 1/2 cups sliced cremini mushrooms
  • 1 1/2 teaspoons fresh sage, finely chopped
  • 1/4 cup heavy cream
  • 1/2 teaspoon ground nutmeg
  • Olive oil (for sautéing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt; cut in cold butter until crumbly. Gradually add ice-cold water until dough forms a ball. Chill for 20 minutes.
  3. Roll out dough into a circle and place it in a tart pan; prickle the bottom with a fork.
  4. Bake the crust for about 12-15 minutes until lightly golden.
  5. Sauté sliced mushrooms in olive oil until caramelized; set aside.
  6. In a bowl, mix pumpkin purée, heavy cream, chopped sage, nutmeg, and black pepper until smooth. Fold in sautéed mushrooms.
  7. Pour filling into par-baked crust and bake for an additional 25-30 minutes until golden and set.
  8. Let rest for 10 minutes before slicing and serving.
