  • 500g chicken breast, cubed
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • Salt & black pepper

Instructions

  1. In a mixing bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and black pepper.
  2. Pour half of the marinade over the cubed chicken in a separate bowl or resealable bag. Marinate for at least 30 minutes in the refrigerator.
  3. Prepare vegetables by cutting them into even-sized pieces.
  4. Thread marinated chicken and vegetables onto skewers, alternating between each.
  5. Preheat grill over medium-high heat and cook the skewers for about 5-6 minutes on each side or until chicken reaches an internal temperature of 165°F (75°C).
  6. Brush remaining marinade onto skewers during the last two minutes of grilling.
