500g chicken breast, cubed
1 red bell pepper, chopped
1 zucchini, sliced
1 red onion, cut into chunks
3 tbsp honey
3 tbsp soy sauce
2 garlic cloves, minced
1 tbsp olive oil
Salt & black pepper
Instructions
In a mixing bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and black pepper.
Pour half of the marinade over the cubed chicken in a separate bowl or resealable bag. Marinate for at least 30 minutes in the refrigerator.
Prepare vegetables by cutting them into even-sized pieces.
Thread marinated chicken and vegetables onto skewers, alternating between each.
Preheat grill over medium-high heat and cook the skewers for about 5-6 minutes on each side or until chicken reaches an internal temperature of 165°F (75°C).
Brush remaining marinade onto skewers during the last two minutes of grilling.
