  • 4 skinless boneless chicken breasts
  • 1/2 cup fresh parsley (finely chopped)
  • 1/2 cup fresh cilantro (finely chopped)
  • 2 green onions (green parts only, finely chopped)
  • 23 cloves garlic (finely chopped)
  • 1 red chili (deseeded and finely chopped)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup olive oil
  • 1 tablespoon red or white grape juice vinegar
  • Kosher salt and ground pepper (to taste)

Instructions

  1. In a mixing bowl, combine parsley, cilantro, green onions, garlic, red chili, oregano, and basil. Slowly add olive oil and grape juice vinegar while seasoning with salt and pepper.
  2. Marinate chicken breasts in one-third of the chimichurri sauce for at least 30 minutes.
  3. Preheat an outdoor grill or grill pan over medium-high heat.
  4. Grill chicken for about 6-8 minutes on each side or until fully cooked (internal temperature should reach 165°F).
  5. Let the chicken rest for 5-10 minutes before slicing.
  6. Serve sliced chicken drizzled with remaining chimichurri sauce.
