1 1/2 cups peach preserves
1/4 cup low-sodium soy sauce
1/3 cup chili garlic sauce
2 tablespoons olive oil
2 tablespoons lemon juice or apple cider vinegar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
About 2.5 to 3 pounds boneless skinless chicken breasts
Fresh cilantro (optional for garnishing)
Sliced peppers (optional for garnishing)
Instructions
In a medium bowl, whisk together peach preserves, soy sauce, chili garlic sauce, olive oil, lemon juice or vinegar, salt, and pepper until well combined.
Place chicken breasts in a ziptop bag and pour in three-quarters of the marinade. Seal the bag tightly and massage it to coat the chicken evenly. Marinate in the refrigerator for at least one hour or overnight for best flavor.
Preheat the grill to medium-high heat (about 450°F).
Remove chicken from marinade and place on the grill. Grill for about 5 minutes on each side or until internal temperature reaches 165°F.
Baste with reserved marinade during grilling for extra flavor.
Let rest for 5-10 minutes before slicing. Garnish with fresh cilantro and sliced peppers if desired.
