  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 California avocados (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Chopped cilantro
  • Balsamic glaze
  • Diced red onion for garnish

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, minced garlic, paprika, cumin, salt, and pepper.
  2. Place chicken in a resealable bag or dish and pour the marinade over it. Ensure each piece is coated well. Let marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Lightly oil the grill grates before placing marinated chicken on them.
  5. Grill each side for about 6–7 minutes until golden brown and internal temperature reaches 165°F.
