Ingredients
Scale
6 boneless chicken thighs (skin on or off)
3 fresh peaches (cored and quartered)
1 diced peach (skin off)
1 tsp sugar
1/2 cup barbecue sauce
3 tbsp apple cider vinegar
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp chili powder
1/4 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
Instructions
In a small bowl, mix together onion powder, garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper to create the spice rub.
In a saucepan over medium heat, combine the diced peach and sugar. Simmer for about 5 minutes until softened.
Add barbecue sauce and apple cider vinegar to the saucepan; simmer for another 5 minutes before blending until smooth.
Preheat the grill on medium-high heat. Season chicken thighs with spice rub and grill for 3-5 minutes per side until cooked through (internal temperature should reach 165°F).
Brush the grilled chicken with the prepared BBQ sauce during the last minute of cooking.
Grill peach quarters for about 1-2 minutes per side until caramelized.
Let chicken rest for 5-10 minutes before serving alongside grilled peaches.
