  • 1/2 cucumber, grated
  • 2 cups cooked rice or quinoa
  • Cherry tomatoes, halved
  • Kalamata olives, pitted
  • Feta cheese, crumbled

Instructions

  1. Prepare the tzatziki sauce: In a bowl, mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, lemon juice, dill, salt, and pepper. Refrigerate to meld flavors.
  2. Sauté onions: Heat olive oil in a skillet over medium heat. Add chopped onion and cook until softened (about 3 minutes). Stir in minced garlic for another 30 seconds.
  3. Brown the beef: Add ground beef to the skillet along with oregano, smoked paprika, cumin, salt, and pepper. Cook until browned (8–10 minutes), breaking up meat as it cooks.
