1 cup + 2 Tablespoons all-purpose flour
6 graham crackers (crushed)
½ cup unsalted butter (softened)
¾ cup light brown sugar
1 large egg
2 ounces unsweetened baking chocolate (chopped)
3½ ounces vegan marshmallows crème
Powdered sugar for frosting
Instructions
Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a mixing bowl, cream together softened butter and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
In a separate bowl, whisk together flour, crushed graham crackers, cornstarch, ground cinnamon, baking soda, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined.
Chill the dough for at least 30 minutes in the refrigerator.
Scoop rounded tablespoons of dough onto prepared baking sheets.
Bake for 10-12 minutes until edges are golden but centers remain soft.
While cooling, prepare the chocolate fudge frosting by melting chopped chocolate with butter.
Mix in powdered sugar and milk until smooth; frost half the cookies.
For the vegan marshmallows buttercream, combine softened butter with vegan marshmallows crème, vanilla extract, salt, and powdered sugar; beat until fluffy.
Spread or pipe marshmallow frosting on remaining cookies and sandwich them.
