  • 8 large fresh peaches (peeled, pitted, and sliced)
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 stick Earth Balance® butter (cut into small pieces)
  • 1/3 cup boiling water
  • 4 tsp organic sugar (for sprinkling)
  • 1 1/2 tsp cinnamon (for sprinkling)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss sliced peaches with brown sugar, granulated sugar, lemon juice, corn starch, cinnamon, and nutmeg until well combined.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for about 10 minutes.
  4. In another bowl, whisk together flour, both sugars, baking powder, and salt. Cut in the cold Earth Balance® butter until crumbly.
  5. Stir in boiling water until just combined.
  6. Spoon the topping over the baked peaches evenly.
  7. Mix remaining sugar and cinnamon for sprinkling on top before baking again for an additional 35 minutes or until golden brown.
  8. Let cool slightly before serving warm with dairy-free vanilla ice cream.
