  • 1 ½ cups white sugar (or agave syrup/stevia)
  • 1 ½ cups freshly squeezed lemon juice (about 810 lemons)
  • 2 cups mango chunks (fresh or thawed frozen)

Instructions

  1. In a small saucepan over medium-high heat, combine 1 ½ cups sugar and 1 ½ cups water. Stir until the sugar dissolves to create simple syrup. Let cool.
  2. Blend mango chunks with half a cup of water until smooth.
  3. In a pitcher, combine cooled simple syrup, lemon juice, and mango purée. Add remaining water to taste.
  4. Stir well, cover, and refrigerate for at least one hour before serving.
  5. Serve over ice and garnish with lemon slices or mint leaves if desired.
