  • 10–12 frozen potstickers or gyoza (vegetable or chicken)
  • ¼ cup water
  • 4 ounces white button mushrooms, sliced
  • 1 cup broccoli florets
  • 20 green beans, sliced into thirds
  • 1 large carrot, sliced thinly
  • ¼ cup small diced onion
  • 1 tablespoon sesame oil
  • 1 tablespoon extra virgin olive oil
  • ¼ cup reduced-sodium soy sauce
  • ¼ cup rice apple vinegar
  • 1 tablespoon sugar or honey
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch + 1 tablespoon cold water

Instructions

  1. Heat sesame oil and olive oil in a large skillet over medium-high heat. Add frozen potstickers directly from the freezer and cook for about 2–3 minutes until golden brown.
  2. Carefully add ¼ cup water around the potstickers (not directly on them) and cover the skillet. Steam for about 5–6 minutes until cooked through.
  3. In the same skillet, add sliced mushrooms, broccoli florets, green beans, carrot slices, and diced onion. Stir-fry for about 5–6 minutes until vegetables are tender-crisp.
  4. In a small bowl, mix together soy sauce, rice vinegar, sugar/honey, grated ginger, cornstarch, and cold water until smooth.
  5. Return cooked potstickers to the skillet and pour sauce over all ingredients. Toss gently to coat and simmer for an additional couple of minutes until the sauce thickens slightly.
  6. Garnish with sesame seeds and chopped green onions before serving.
