  • 3 pounds russet potatoes (peeled and cubed)
  • 2 tsp kosher salt
  • 4 hard-boiled eggs (peeled and chopped)
  • 1/2 cup hamburger dill pickles (chopped)
  • 2 Tbsp hamburger dill pickle juice
  • 1/2 cup Vidalia or sweet yellow onion (finely minced)
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • Dash paprika (for garnish)

Instructions

  1. In a large pot, bring water to a boil. Add 2 tsp of kosher salt and the cubed potatoes. Cook for about 10 minutes until tender but firm. Drain and let cool slightly.
  2. Return cooled potatoes to the pot. Using a potato masher, mash gently a few times to break them down while keeping some chunks intact.
  3. In a large mixing bowl, combine mayonnaise, yellow mustard, finely minced onions, chopped pickles along with their juice, chopped hard-boiled eggs, remaining kosher salt, and black pepper. Mix until well combined.
  4. Gently fold the mashed potatoes into the dressing mixture until all are coated evenly.
  5. Transfer to a serving bowl or container, sprinkle with paprika for garnish, cover tightly, and chill in the refrigerator for at least one hour before serving.
