  • 125 g fresh raspberries
  • 75 g caster sugar (for fruit filling)
  • 90 g cold butter (cubed)
  • 90 g caster sugar (for topping)
  • 140 g plain flour
  • 1 teaspoon baking powder
  • 2 teaspoons milk (or plant-based alternative)
  • 2 tablespoons flaked almonds
  • Zest of 1 lemon

Instructions

  1. Prepare the Fruit Filling: In a large bowl, gently combine peaches, raspberries, and 75 g caster sugar. Let sit for 10-15 minutes.
  2. Assemble the Topping: In another bowl, mix flour, 90 g caster sugar, and baking powder. Cut in cold butter until crumbly. Add milk and lemon zest; stir until just combined.
  3. Layer & Bake: Preheat oven to 180°C (350°F). Pour fruit mixture into an oven-safe dish and dollop topping over it. Sprinkle flaked almonds on top. Bake for 30-35 minutes until golden brown.
