  • 4 slices whole-grain bread (toasted)

Instructions

  1. In a bowl, combine the diced cucumber and salt; let it sit for about 5 minutes to draw out moisture.
  2. In another bowl, mix the Greek yogurt, crumbled feta (or vegan cheese), herbs, grated lemon peel, lemon juice, and black pepper until combined.
  3. Gently fold in the salted cucumbers to the yogurt mixture.
  4. Toast the whole-grain bread slices until golden brown.
