  • 1 egg, room temperature

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Pulverize freeze-dried strawberries into fine powder and set aside.
  3. In a mixing bowl, cream together room-temperature butter and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually incorporate flour, baking soda, salt, strawberry jam, and half of the reserved strawberry powder into the mixture.
  5. Roll dough into tablespoon-sized balls and place them on prepared baking sheets with space between each ball.
  6. Bake for 8 minutes; gently tap the sheet against the counter before returning to the oven for an additional 2-3 minutes until golden edges form.
  7. Allow cookies to cool on sheets for five minutes before transferring to a wire rack.
  8. In a bowl, mix softened cream cheese with powdered sugar and hot milk until smooth.
  9. Stir in remaining strawberry powder and vanilla extract until combined.
  10. Dip or drizzle icing over cooled cookies and let set for about 15 minutes before serving.
